After working in Michelin starred restaurants in France, I was looking for a new challenge and more open mindedness about wine and I found that here in the UK. In 2007 I joined Hotel du Vin in Bristol. I moved to a 2 rosette restaurant called Bells Diner after I have passed my certified sommelier by the court of Master Sommelier. I decided to work with Matthieu Longuere MS at La Trompette (1 Michelin star) in London to increase my knowledge. I successfully passed my Advanced Sommelier. Then I moved to the Cotswolds for 4 years as Group Beverage Manager of The Lucky Onion. I then took the position of Head sommelier at Adams in Birmingham (1 Michelin star). I am currently setting up my business of consulting for professionals and organised some masterclass tastings for private guests. In 2000, Matthieu won the UK Sommelier of the Year Competition Trophée Ruinart. Representing the UK, he reached the semi-final of the Best Sommelier of Europe Competition in 2010.
