Currently a Master Sommelier candidate and part of UK Sommelier Association helping sommeliers in the North with their training and examinations. Ex Head Sommelier in a few Michelin starred restaurants like Chez Bruce, The Glasshouse, The Man Behind The Curtain and Shaun Rankin at Grantley Hall turned ambassador for a wines made by families from little known countries, regions and grape varieties that can help you discover flavours you have never experienced before.

Anastasios Karakasis

Head of Wine, Wine Buyer & BDM

Anastasios Karakasis is part of the new generation of Greek sommeliers with a strong international presence. He is an independent Wine Consultant across the UK, Greece, and Cyprus, with studies in Hotel Management and certifications from WSET and the Court of Master Sommeliers. His career spans Greece, Cyprus, Turkey, and the UK, where he has held key positions including Wine Consultant for Photos Photiades Group (representing Diageo & Moët Hennessy), General Manager & Head of Wine at Maçakızı Hotel in Bodrum, and Head of Wine roles in London at the Carlton Club, Dinner by Heston Blumenthal (2 Michelin stars), and Marcus by Marcus Wareing (1 Michelin star). He later became Head of Wine & Wine Buyer at Bacchanalia, leading its opening and managing a team of 11 sommeliers. He is also an international wine judge. Most recently, he led the opening and the wine program at Lilibet’s in Mayfair, shaping a modern, refined, and globally driven wine concept. He serves as Business Development Manager at Vino Cultura Group in Cyprus while also developing his own projects in Greece

Elton Muco

Elton is a Certified Sommelier, accredited by the Court of Master Sommeliers in January 2022, and is currently pursuing the Advanced Sommelier certification. Originally from Albania, he brings over 20 years of experience in the hospitality industry. Since relocating to London in 2016, Elton has continued to develop his expertise in wine and fine service. In 2021, he joined the prestigious 67 Pall Mall, one of the world’s leading private members’ wine clubs, where he further refined his knowledge and leadership within the sommelier team. He now serves as Head Sommelier & Lounge Operations, overseeing wine and food service, team development, and curated guest experiences.

Emer Landgraf

Head Sommelier , The Clover Club

In between lectures of a Finance degree, Emer Landgraf attended the 2016 Barolo release alongside Chiara Boschis. In awe of Chiara’s ethos and mission, it was from that point that Emer switched her focus from numbers to wine. Nearly one year to the day, Emer and her business partners Mark and Daniel opened up Mosconi, a 50 seater restaurant wine bar in the heart of James St, Brisbane. Since then, she moved to work for FINK group at OTTO Restaurant as Assistant Head Sommelier, helping to secure ‘Best Wine List of the Year’ Queensland for 2021. Emer is now the Head Sommelier at The Clove Club, 2 Michelin star and #38 in World’s 50 Best Restaurants, by Chef Patron Isaac Mchale.

Joseph Stark

Beverage Director & Consultant , Wild Shropshire Restaurant

Originally from Birmingham, Joe started his career at Michelin Starred Carter's of Moseley as their Sommelier. He then progressed to become the Beverage Director of Wild Shropshire, a restaurant focused on its sustainabilty with ingredients foraged & from thier own farm. He creates a unique wine flight for each evening, aswell as flights of in-house made fermentations & also a flight of drinks without alcohol. He is currently completing his WSET Diploma in Wine & WSET Level 3 in Spirits.

Klearhos Kanellakis

Head Sommelier & Wine Buyer , Jul’s

Klearhos is Wine Buyer for Jul’s restaurant that has just opened, specialising in Mediterranean cuisine and wine focussed. Previously, he was working as Head Sommelier at Eksted at the Yard and of Trivet restaurant awarded Second best wine programme in London by Drinks Business magazine and International Special Jury Prize by Star Winelist. Before this role, Klearhos worked at 67 Pall Mall - private members’ club for wine lovers, initially joining the opening team and making his way to Assistant Head Sommelier position. Some of his favourite regions include Tokaj, Madeira, Northern Rhone, Tuscany, Champagne and the countries of New Zealand and Greece. Klearhos holds the Wset Diploma Level 4 in Wine and is currently preparing for the Master Sommelier exam, the pinnacle of wine qualifications.

Konstantinos Nestoridis

Head Sommelier , Oblix at The Shard

Head Sommelier and wine buyer at Oblix at The Shard by London Bridge. Konstantinos has worked at some of the restaurants of the country's best chefs. Konstantinos has worked in hospitality for over a dozen of years and he has executed wine pairings for dishes of the chefs as; Gordon Ramsay, Arnaud Bignon, Jason Atherton, Paul Walsh, Fabio Petrucci, Sophie Michell, Marcus Wareing, Alyn Williams, Tom Booton, Charlie Tayler, Marcus Eaves, Mark Abbott, Felix Petrucco, Liam Anderson and Daniel Clifford. At the moment he manages the wine operations as Head Sommelier. At the moment he manages the entire wine operations as Head Sommelier at Oblix.

Leonardo Barlondi

I am currently the Assistant Head of Wines at The Dorchester. Before this role, I worked in Florence, Copenhagen, Barcelona, and Antigua. I arrived in London 12 years ago and began my journey at Maze by Gordon Ramsay, an inspiring experience where I also achieved the Certified level at the CMS.

Magdalena Sleziak

Originally from Krakow, Poland. There in 2016 I stared working as a sommelier, followed by a Head Sommelier role in Enoteka Pergamin in Krakow's Old town. During my 6 years there my passion for food, wine and hospitality has grown and I stared to pursue educational journey. Eventually I moved to the UK to work as Head Sommelier at one Michelin starred Northcote. Now I am a Food and Beverage Manager overlooking the operation of restaurant, bar and highly rewarded wine programme. As wine curator I help to create and keep up to date Northcote's excessive wine list alongside Managing Director Craig Bancroft and Nick Adams MW. Since moving in 2022 I have been awarded top 5 Young Sommeliers in 2023, top 100 in 2024 and recognised with an Innovation Award in 2025 by Top 100 UK Sommeliers noticing my hard work in creating diverse wine pairings including varied selection of Alcohol-free beverages. In 2025 I was honoured number 34 in the top 50 by Harper's Wine & Spirit. I hold WSET Diploma and CMS Certified.

Maria Boumpa

Wine Director , Da Terra Restaurant

I'm the Head Sommelier at the 2* Michelin Da Terra Restaurant in London. Originally from Greece, with international experience in 5* Hotels and Michelin starred Restaurants, I moved to the UK in 2018. Currently, finishing the WSET Diploma in Wines and recently achieved the Advanced Examination of Court of Master Sommeliers with top honours. In 2025, I was crowned UK Sommelier of the Year and in 2026 I will represent the UK in the ASI Best Sommelier of the World Competition in Lisbon.

Matteo Furlan

Head of Wines , The Dorchester

Born and raised in Venice, Matteo had Hospitality in his blood since he was born. Matteo’s family used to run a restaurant and hotel in the Venetian country side. He’s graduated in tourism and Catering Management, soon after he moved to London. He worked for Caprice Holding, Roka, Hakkasan before moving to the Ritz. He spent there 6 years and he has joined The Dorchester as Head of wines in March 2023. Matteo Holds WSET Diploma, he is a WSET educator, ASI Gold Diploma, CMS Certified.

Stephanie Robertson

Head of Experience , Restaurant Associates

Steph has worked at Le Gavroche and Roux at Parliament Square as a sommelier, is qualified to teach up to Level 2 WSET in wines and has won an Award of Excellence with the Academy of Culinary Arts. Steph is an active and influential member of the wine world and regularly takes part in thought leadership talks and discussions around the future of wine and trends in the drinks industry. She is a member of the International Wine and Food Society and continually monitors trends through industry reports, mailing lists and engaging with suppliers and importers. She translates this expertise and passion into her wine lists, featuring some of the latest trends that our customers are looking for, such as low alcohol alternatives, sustainably sourced wines, social enterprises.

Vincenzo Arnese

Wine Director , Raffles London at the OWO

Originally from Napoli, Vincenzo Arnese discovered his passion for wine at a young age, first tasting his grandfather’s homemade wine at five—an experience that shaped his future career. He later specialised in sommellerie at the hospitality school in Stresa, Italy. After graduating, Vincenzo built his experience in prestigious hotels across Switzerland, England, and Australia. His international career began in 2008 at The Waterside Inn in Bray, before moving to Melbourne in 2012, where he worked at leading venues including Vue de Monde. In 2013, he relocated to London as head sommelier and wine buyer at Dinner by Heston Blumenthal. He later became head sommelier at Alain Ducasse at The Dorchester, further establishing his reputation among top wine professionals. In 2023, he joined Raffles London at The OWO as wine director, developing the wine programme for Mauro Colagreco. He is now Prestige Sales Account Manager at Berkmann Wine Cellars, combining his expertise with a focus on premium wine distribution. Vincenzo holds the WSET Diploma and has passed the Advanced Examination of the Court of Master Sommeliers. His accolades include Best Sommelier UK 2015, runner-up at the 2019 UK Ruinart Challenge, Taittinger UK Sommelier of the Year 2022, GQ Best Sommelier 2023, and #1 rankings in the 2025 Harpers Top 50 Sommeliers and Taylor’s Port Top 100 Sommeliers (UK).

Zoe Donadio

Assistant Wine Manager , Impala

Zoé began her career behind the bar, building a strong foundation in spirits and cocktails before moving into wine at Silver Lining. She later led the wine cellar La Cave at The Hoxton and went on to run the drinks program at Apricity, where she focused on responsible sourcing and low-intervention winemaking. Now Assistant Wine Manager at newly opened Super8 restaurant Impala, she continues to shape thoughtful, accessible wine lists. Recently named #12 Best Sommelier in the UK by Harpers and a WSET Diploma graduate, Zoé focuses on wine’s role within a more sustainable food system, with an emphasis on terroir, accessibility, and low-intervention practices.

After a fifteen year career as a guidebook inspector, Tom opened The Terrace Rooms & Wine in Ventnor Isle of Wight, building an award winning-900 bottle cellar at the heart of a true wine hotel where he hosts daily tastings for all residents. He currently represents the UK at Wine New Zealand’s annual Sommit event and has been named 12th best UK sommelier by Harpers Wine & Spirits. Tom currently holds Star wine lists "Best UK rose" list for the UK award too.

Alberto Gherardi

Consultant & Educator

Alberto Gherardi is a Stage 2 Master of Wine candidate, Certified WSET Educators, and enthusiastic advocates for Italian wine. He holds degrees in Economy and Management, complemented by international experience in the US. After gaining first hand sommelier experience in Umbria, he pursued advanced hospitality studies at the Swiss Hotel Management School in Montreux, Switzerland, before relocating to London. In the UK, he rose through the ranks from sommelier to Head Sommelier roles across luxury hospitality environments including The Four Seasons, Edwardian Hotels, and private members’ clubs. He has served as Group Wine Education Managers at Gordon Ramsay Restaurants, where he designed bespoke training programmes tailored to both casual and high-end venues. In June 2023 he was ranked amongst the top 100 Sommeliers in UK and in June 2025 he received the “Excellence in Education” award at the Taylor’s Port Top 100 Sommeliers UK, a prestigious recognition of their outstanding contribution to wine education. In 2025 he has co-founded, along with his brother, Gherardi Universal Beverage Solutions Ltd with the goal to design profit-boosting beverage consultancies and deliver world-class educational experiences.

I’m Italian and Diploma WSET qualified, with over 15 years’ experience in the hospitality and wine industry. I’ve worked as Sommelier, Head Sommelier and Buyer for renowned groups such as Hakkasan, Roast, and Belmond Hotels. I then spent three years at Bibendum, where I led the Premium Team. I’m currently working at Liberty Wines as a specialist in Italian wines. Alongside my professional roles, I’m also a judge for the IWSC and the London Wine Competition.

Antonio Polise

Wine Director , LSL Capital Group

I enrolled in the AIS and qualified as a sommelier in 2015. My career quickly evolved at one of the world’s most iconic hotels, The Savoy, in the Savoy Grill. Over four years, I progressed from Commis Sommelier to senior roles, gaining experience with some of the finest wines in the world and studying at the WSET. During this time, I also reached the finals of the Best Sommelier of England competitions 2016 and 2017. Seeking greater responsibility, I moved on to The Square, a Michelin-starred restaurant, as Head Sommelier, managing a wine list of over 2,000 labels and leading my own team. In 2020, I became Head Sommelier at Le Sirenuse in Positano, managing one of the most exclusive wine lists in the country and deepening my knowledge of Italian indigenous grape varieties. I developed my own food and wine pairing method, which I taught through tastings and educational courses in Naples. In 2022, I returned to London, working as Head Sommelier at Nusret Steakhouse before achieving my career goal of becoming Wine Director for LSL Capital, overseeing multiple restaurants with different concepts. I continued my professional development with the Court of Master Sommeliers and participated in major international competitions. I divide my professional life between the UK and Italy, working as Wine Director in London while promoting Italian wine abroad, including my family’s winery, and running my own wine shop in Campania.

Augusto Gherardi

Augusto Gherardi is the co-founder of Gherardi UBS a wine education and consultancy company. WSET Diploma holder and certified WSET Educator in Wine, Spirits, and Beer, he combines extensive fine-dining and international hospitality experience. Winner of the Sommelier Edit 2025 Excellence in Education Award, Augusto is known for his engaging teaching style and commercial insight, and is passionate about raising standards, supporting emerging talent, and contributing to the wine conversation through education, judging, and competitions.

Bethany Pogson

Head of Wine and Services , Restaurant Twenty Two

'Originally from Huddersfield, West Yorkshire, Bethany has worked in wine in fine dining restaurants for almost ten years. She is currently the Head of Wine and Service at Michelin-starred Restaurant Twenty Two in Cambridge, having previously served as sommelier and Assistant Manager of etch. by Steven Edwards in Hove. Bethany was named the 26th in Harpers Top 50 Sommeliers in the UK in 2025, and has a particular love of English wines

Wine has been part of my life since growing up in Italy, but my palate truly took shape in London. At Sketch’s Lecture Room & Library, I immersed myself in the world of fine wines, developing a deep appreciation for structure, terroir, and the stories behind every bottle. I later moved to Amsterdam and worked across several restaurants within the 212 Group, where I refined my palate further while pairing wines with a dynamic tasting menu. Because taste goes beyond wine, I later moved into the world of tea. Today I work at Van Rees in Rotterdam, a global tea trading company, where I taste and evaluate teas from around the world—an experience that enhances my sensory skills and translates into a refined approach to evaluating a spectrum of flavours.

Charles Carron Brown

Restaurant Manager and Sommelier , Aulis London

Charles is currently the Restaurant Manager & Sommelier at Aulis London. He’s held this position since June 2022, after spending several years working for the Simon Rogan group up in the Lake District, including L’Enclume & Henrock. Before that he had a 4-year stint at the Ritz London where he passed his Certified Exam with the CMS. He’s also one of the 1st sommeliers in the UK to pass the ASI Diploma in 2019. He’s also currently studying for the CMS Advanced, which he plans to take in 2027. Charles is a huge advocate for local wines, especially English Sparkling, where he champions them at Aulis London instead of champagne with our multi course tasting menu.

Chiara Sieni

From Tuscany to London: A Passion for Wine My journey into the world of wine began in Florence, Italy, where I grew up immersed in the region's rich winemaking traditions. This early exposure inspired a lifelong interest, but it wasn’t until 2011, after moving to London, that I transformed my passion into a career. In London, the dynamic and diverse hospitality industry became my classroom, allowing me to deepen my appreciation for wines from around the globe. This curiosity inspired me to explore celebrated wine regions and discover the nuances of grape varieties, flavours, and techniques that define them. To solidify my expertise, I embarked on formal studies at the renowned Wine & Spirit Education Trust (WSET), where I proudly earned the WSET Diploma. My thirst for knowledge didn’t stop there; I pursued further specialization at The West London Wine School, graduating with the highest honors as both a French and Italian Wine Scholar. Now recognized as a specialist in Italian wines, I proudly serve as an Ambassador for Langhe and Valpolicella wines —regions that hold a special place in my heart. In my current role as Assistant Manager at Amathus Drinks, I lead engaging wine events and masterclasses, sharing my expertise and enthusiasm with professionals and enthusiasts alike.

Chris Frayling-Cork

Chris Frayling-Cork transitioned to the world of wine after working as a doctor in the NHS, starting his professional career as a Sommelier at Dinings SW3 restaurant in London. He ended his tenure there as Beverage Manager, before joining The Chancery Rosewood Hotel in September 2025 as Head Sommelier. Chris is currently studying for his WSET Diploma, holds his CMS Certified, and was ranked 25th in Harper’s Wine and Spirit’s Top 50 Sommeliers 2025

Cong Cong Bo

Wine & Cellar Executive , Midsummer House

Cong (pronounced “Chong”) owns and runs a wine shop-bar hybrid Amphora in Cambridge, UK. Like most children of Chinese parents, she studied Medicine at Cambridge, but ultimately found wine to be the most satisfying meeting of science, sensory satisfaction, and skin contact. Cong has been listed in Harper’s Top 25 UK Sommeliers 2022 & 2023, and in CODE Hospitality’s Most Influential Women 2023.

Daniele Arcangeli

Head Sommelier/Wine Buyer , Ekstedt at the Yard

Daniele Arcangeli is an experienced Italian Sommelier based in London. He started his professional path in the hospitality industry in Tuscany more than 20 years ago; his endless passion around hospitality, wine, beverages and foreign languages led him to travel to Europe and work alongside great professionals and renowned Michelin starred Chefs Daniele is a Certified Sommelier at the Court of Master Sommeliers, and he is studing for the Wset Diploma; during his career he was awarded as Best Sommelier of Tuscany in 2012, in 2015 he got the title as Best Sommelier of Italy, a national contest organized by Associazione della Sommellerie Professionale Italiana, and in 2019 he represented Italy at the ASI Best Sommelier of the World contest held in Belgium by Association de la Sommellerie Internationale. In 2024, Daniele has been featured in the Top 100 UK Sommeliers. He worked for iconic establishments such as Pierre Gagnaire** in Courchevel, Badrutt’s Palace in St.Moritz, Il Piccolo Principe** and Borgo Santo Pietro* in Tuscany. In 2018 he decided to move to the UK where he worked at the three Michelin starred restaurant The Fat Duck***, at the private wine members club 67 Pall Mall and at Angler* restaurant. Now he’s working as Head Sommelier/Wine buyer at River Restaurant by Gordon Ramsay.

Daniele Di Blasio

I am originally from Italy, coming from a different background, having graduated in Arts and Literature at University, with recent studies in Archaeology and an MBA from Bologna Business School. Now Head Sommelier and Assistant Restaurant Manager at Bvlgari Hotel, London. My hospitality and wine journey has developed between Italy, Spain, Brazil, and UK, including experiences in Michelin-starred restaurants and luxury venues. Along the way, I've earned multiple wine certifications, as those from WSET and CMS, and developed a passion for gastronomy, local cultures, and creating memorable dining experiences.

I'm a passionate wine enthusiast with a deep appreciation for craftsmanship in winemaking combining technical precision with genuine curiosity and enthusiasm for discovery.

Dario Barbato

Head of Wine, Wine Buyer, Wine Consultant , San Carlo Group

I am a self employed wine and beverage specialist supporting hospitality businesses in building profitable, high quality wine programs. My work includes selecting the right suppliers, curating wine lists tailored to each venue’s concept, and calculating GP and selling prices that align with the local demographic and commercial goals. As a WSET Certified Educator, I train hospitality teams at Levels 1, 2, and 3, and I design bespoke training sessions focused on upselling, product knowledge, and service confidence. I also host private wine tastings, guiding guests through each wine and explaining the logic behind food pairings to create an engaging and educational experience.

Dion Wai is a London based sommelier with experience at notable venues such as 67 Pall Mall, Hide, and Raffles London at the OWO. A UK Best Sommelier of the Year finalist, he currently oversees the wine list at Burgundy homage hotspot Cabotte.

Following 20 years in the London Sommelier world and 6 years as the head sommelier at 1* La Trompette. Donald now works as a consultant for Butterworth Penzer. He has a small English winemaking side project having also made wine in Hungary and South Africa.

Francesco Di Fonzo is Head Sommelier and Wine Buyer at Kioku by Endo, Raffles London at The OWO. A Certified Sommelier by the Court of Master Sommeliers and recognised among the Top 100 Sommeliers UK in 2025, he has built his career within five-star hotels(Corinthia , The London Edition) where he developed a strong passion for wine service and guest experience. He is especially drawn to wines with personality, balance and a true sense of place. Francesco brings a practical, guest-focused approach to judging, combining enthusiasm with real on-trade insight.

George Hersey

Restaurant Director , Adam Handling Collection

George joined the Adam Handling Collection as Restaurant Manager in 2018 and was soon promoted to General Manager of Frog. He was then appointed Group General Manager in 2020, with responsibility across the Collection’s restaurants and bars, and F&B services. In 2021, George was appointed Restaurant Director for the Collection. On top of his day-to-day role, he is also a regular contributor and speaker at various industry shows and panels, and spearheaded the launch of the Adam Handling Future Food Stars Programme at Ugly Butterfly, a stagiaire programme for students at local Truro & Penwith College. George was instrumental in the opening of Adam’s venues outside of London, and played a key role in helping Frog, the Collection’s flagship restaurant, gain its Michelin star in 2022, which it still retains, and Ugly Butterfly win its Michelin star in 2026. George’s efforts were also recognised with The Loch & The Tyne and The Tartan Fox’s inclusion in the prestigious Top 50 Gastropubs list this year.

In 2004 she finished Wine School in Mendoza and sharpened her taste in American Wines, after a two year wine trip to the U.S. Later in 2010, she went to Sommelier school again in Spain, and in 2015 she also specialised in France & Italy. She has the Certified Sommelier certificate by the Court of Master Sommeliers, the WSET 3 level, and is currently goin g throught the Diploma WSET. In 2022, she entered the Best Sommelier of Argentina´s Contest with good results in the competition, which lead her to be part as a judge of several wine contests around Europe. Work wise, her 21 years of career had drove her to explore the wine industry from every corner. Working in different wineries, in restaurants, in hotels, in cruise ships and currently working as the Head Sommelier in A Tafona Restaurant (1* Michelin) in Santiago de Compostela, Spain.

Originally from Airdrie, Matthew O’Donnell joined the Number One team this summer and brings over a decade of distinguished hospitality and wine expertise to his new role. His career has spanned some of the grandest hotels across England, Ireland and Scotland, including Ashford Castle in Ireland, Grantley Hall in Yorkshire and The Strathearn at Gleneagles Hotel in Perthshire. He further honed his expertise in world-class wines as a Sommelier at London’s renowned fine wine members’ club, 67 Pall Mall, where he worked closely with one of the city’s most extensive cellar collections. O’Donnell leads the award-winning wine programme at Number One, curating a wine list in partnership with the restaurant’s Chef de Cuisine Mathew Sherry and Manager Emma Hemy, to perfectly complement the seasonal menus. He holds multiple Wine & Spirit Education Trust (WSET) qualifications, including Level 1 in Sake, Level 2 in Spirits and Level 3 in Wines. He is also currently studying towards his WSET Diploma in Wines. A particular enthusiast for Austrian wine, he counts the region among his personal favourites. Beyond his professional achievements, he has represented Scotland playing chess and continues to rank in the top 100 players in the country.

My early memories are helping my Grandfather pick grapes that were being used to make wine for Blandys and also my Grandfather would make a small amount of table wine for the family I moved to the UK when I was 6 . I was first introduced to fine wine at the age of 12 and fell in love with wine. I started working in the family restaurant with rooms which my father started in 1975 and which Is still family owned. I have had the honour try drink some of the most expensive wines in the world. I have judged at various prestige wine competitions and am often seen as a point of reference for Portuguese wines after nearly 40 years in the trade

Nelson Sintrao is the Hotel Beverage Manager at Novotel London Canary Wharf and is responsible overseeing award-winning, sky-high restaurant, bar and rooftop terrace, Bōkan 37,Bōkan 38 and Bōkan 39, delivering quality standards, customer satisfaction and profitability. Born in Portugal, Nelson started his career as a bartender at 19 years old, working in the Mercure Hotel in Lisbon. With a particular interest in wine, Nelson went on to pursue a career as a sommelier, developing his wine knowledge from his own research and self-motivation, enabling him to pass his WSET Level 3 in wines and spirits with a distinction. Having moved to London in 2013, Nelson gained invaluable experience, working as a sommelier across several established fine-dining restaurants, such as Sushi Samba, Duck and Waffle, Roka Charlotte Street. A true team player and passionate individual. Nelson joined Novotel London Canary Wharf in 2017, where he led the wine department, providing a high standard of service with a curated wine list before overseeing the full beverage department and operations at the hotel.

Ascot, January, 2025 – Nikos Emner joins Coworth Park as Head Sommelier, bringing with him extensive expertise gained from a distinguished career in prominent wine bars and Michelin-starred restaurants. Before joining the Dorchester Collection, Nikos served as Assistant Wine Director at Mandarin Oriental Hyde Park, where he focused much of his time on the Michelin-starred restaurant Dinner by Heston Blumenthal. Prior to that, he spent two years at the three-Michelin-starred restaurant The Fat Duck in Bray, following his move to the UK from Greece. Nikos traces his passion for wine to a pivotal summer in Crete, where he first became captivated by the artistry and complexities of the craft.

She is a CMS certified sommelier and WSET approved programme provider of wine & spirits qualifications. Rebecca is also a certified IVDP Port educator and Comité de Champagne educator. Rebecca’s wealth of knowledge comes from working in global wine tourism, the wine trade and hospitality industry as Head Sommelier at 2 Star Michelin restaurant - Gidleigh Park, Devon. Rebecca also consults at her sister’s restaurant Rendezvous Wine Bar in Exeter, which she has owned for 20 years. As an AWE member, she teaches WSET qualifications to hospitality and drinks trade professionals. Rebecca judges for several international and national wine competitions, specialising in cool climate wines. Rebecca is the drinks seminar co-ordinator for the Dartmouth Food Festival. She is a Champion for ‘Smell Taste’, the UK charity for people affected by smell and taste disorders. Rebecca also enjoys hosting private and corporate tasting events.

Valentin is an experienced wine specialist, wine judge and a learning development professional. With over 15 years experience in hospitality, Valentin has worked in multiple Michelin star restaurants in UK such as Petrus by Gordon Ramsay, Gymkhana, Dinner by Heston Blumenthal and Purnell's in Birmingham. He has Diploma WSET and Advanced Sommelier Certification with The Court of Master Sommeliers UK. Winner of Sud de France and Chile Wine Bar Competitions. As a Sommelier his aim was to establish a connection not only between people but a connection with the history, terroir and the winemaker's passion. His approach was 'think outside the glass', daring to go beyond classic pairings, explore the potential and offer a memorable experience. He continues to inspire others to explore their potential and see things from a new perspective as a learning and development professional.

Margot has worked in wine focussed restaurants in Paris and London after spending a year working on a vineyard in the Languedoc. She is now the wine buyer and general manager at Parsons in Covent Garden where an emphasis on coastal wines to reflect the seafood menu gives a chance to highlight more unknown indigenous varietals alongside your more classic pairings.
